These Raw Cinnamon Rolls Will Change How You Think About Dessert

Raw Cinnamon Roll

     A couple months ago I made healthy, high protein, cinnamon rolls. They were phenomenal but ever since then I wanted to see could we make something even healthier? Less sugar? Less fat? No bake? A raw cinnamon roll never crossed my mind until I got a few comments on it. People seem to really like the raw vegan cinnamon rolls from Erewhon. Soak and Blend

     We have a few things we have to soak, first a quarter cup of psyllium husk. I add it to a large bowl with two thirds cup water, give it a mix and let it hydrate for ten minutes. I am also going to soak ten pitted dates (this is not in the recipe, I just want to do this to soften them). While that stuff is soaking I’m going to make oat flour. I add two cups of whole grain rolled oats to the blender and I pulse it up until it gets really fine.

     Then I add in half a cup of pecans and blend until fine again. The recipe says to switch to a food processor so I add my flour mix to the food processor along with the psyllium husk mixture, a little vanilla extract, maple syrup, and a pinch of salt. Blend until it forms a dough ball!

Filling

     I lay out some parchment paper and dump out the dough. Then I try to form it into a ball, place another piece of parchment on top of the ball, then roll it out with a rolling pin. Next I just even it out the best I can and shape it into a rectangle. I cover it up and set it aside for now. Then for our filling, back into the food processor I add my ten dates (I save the water they were in). I process the dates then once it becomes like a paste, I add some pecans, and process those. Next I add a quarter cup of the date soaking water, a touch of vanilla extract, and cinnamon. Pulse it together! 

Cinnamon Rolling

     It smells like cinnamon roll filling! Then I drop my filling onto the roll and spread it out. I added some crushed pecans inside. Then I roll the cinnamon roll up! Wrap it in the parchment paper, toss it into the fridge for about thirty to forty five minutes or maybe longer, you just want everything to chill together. Once it has chilled, I slice it and it looks amazing! Raw cinnamon roll taste is delicious! The outside is like a nice sweet bread. It’s dense but not gummy at all. It has that great cinnamon taste. Ingredients
  

  • 1/4 cup psyllium husk
  • 10 dates
  • 2/3 cup water
  • 2 cup whole grain rolled oats
  • .5 cup pecans
  • 1 tsp vanilla extract
  • maple syrup
  • salt
  • 2 tbsp cinnamon

Instructions
 

  • Add psyllium husk to a bowl with water, mix it. Add pitted dates to bowl with water. Let both sit for 10 minutes.
  • Add whole grain oats to blender and blend until fine. Add pecans and blend until fine. Then add this mixture to a food processor.
  • Once in the food processor, also add the psyllium husk mixture, vanilla extract, maple syrup, and salt. Blend until it forms a dough ball.
  • Lay out parchment paper and dump out dough. Form it into smooth ball then place a piece of parchment on top. Roll it out with a rolling pin. Even it out and shape it into a long rectangle. Cover and set aside for now.
  • Back to the food processor, add the dates, pecans and process. Add water that dates soaked in, vanilla extract, and cinnamon, pulse.
  • Add filling to roll and spread it out. Add crushed pecans, then roll it up! Wrap in parchment paper and let chill in the fridge for at least 30 minutes. Slice and enjoy!
