Broccoli Soup
Today I am going to be making a one ingredient recipe, that comes out incredible and you can make a bunch of different dishes. I heard Gordon Ramsay talk about it on “Smartless” the other day and I had to make it. It is literally just broccoli soup! I’m taking the broccoli, cutting off the florets and then dropping them into salted boiling water. Add some salt on top as well, cover it up and bring to a boil! I let it boil for three minutes. Soup Prep
The cool thing with this recipe is you can make the main dish, which is the soup, but then we can make like three or four other dishes with this! After three minutes I bring this over to a strainer but I save the water! Now in the blender goes my broccoli along with enough water to cover about half of the broccoli. I put a towel on top because hot liquid usually doesn’t blend well. Next pulse it a couple times, then just start blending. I give it a taste and adjust the saltiness! Now we plate, I top mine with a little olive oil. This comes out incredible.

Savory Oats
I packed up a few containers of it and tomorrow I’ll come back to it and make lunch and dinner! I toss a small saucepan on the stove, and I add a cup of the soup leftovers. Then bring it to a simmer. Once simmering I add a half cup of the quick cooking oats, stir them in and let them cook for about a minute. Then I chop up a green onion. I top this with some kimchi, the green onions, a little bit of hemp seeds, and everything seasoning. Savory oats do not get the attention they deserve!

Broccoli Cheddar Pasta
The dinner version is going to be like broccoli cheddar pasta! I add about a cup and a half of the soup to the blender. I soaked about a cup of cashews earlier today so I drain and rinse those off and toss them into the blender as well as a quarter cup nutritional yeast, and three cloves of garlic. Before I blend I add my pasta to the boiling water. While that is cooking I blend the sauce. When the pasta is done, add the sauce. Now plate! I add some tomato on top of mine. It only took like three minutes for the pasta and the sauce went together in just a minute!

So this is one soup, based off of one ingredient that can make an incredible amount of meals, all of them go together insanely fast. This pasta dish is delicious! It tastes kinda like mac and cheese! This 1 Ingredient Dish Changed Everything
Ingredients
- broccoli
- olive oil
- .5 cup quick cook oats
- 1 green onion
- kimchi
- hemp seeds
- everything seasoning
- 1 cup cashews
- 1/4 cup nutritional yeast
- 3 cloves garlic
- pasta
Instructions
Soup
- Cut florets off broccoli, drop them into salted boiling water. Top with salt, cover and let boil for 3 mins.
- Strain broccoli but save water. Add broccoli to blender and broccoli water about half way. Pulse and blend until smooth, add salt if needed.
Savory oats
- Add soup to small saucepan and bring to a simmer, add oats. Stir and let them cook for a minute.
- Chop green onion. Plate with kimchi, green onion, hemp seeds, everything seasoning.
Broccoli Cheddar Pasta
- Add soup to blender along with soaked cashews, nutritional yeast, and garlic. Add pasta to boiling water. Blend sauce.
- When sauce and pasta are done, combine and enjoy!
