Cherry Cheese

     Nanche supposedly tastes like cheese. I haven’t tried it yet but I watched a video on “Weird Explorer” where he tried these and said they tasted kinda like cheese! At some points he mentioned sharp cheddar, or like a salty parmesan, then he made a video where he actually turned it into ice cream. And he didn’t like it, but I’m wondering if there’s another use for it! I gave it a taste and it is cheesy for sure! There is enough cheddar flavor to make a cheese sauce for a macaroni and cheese. Prep

     The first thing we need to do is remove the flesh from the little seed. But they also have a sticky kind of syrup on them that I want to remove as well so I have a little cup of pretty warm/hot water. I’m going to drop in about a tablespoon or so of some vinegar. I let them soak in this water. After they have soaked I remove the flesh from the seed. I ended up with probably half a cup of nanche material. I add a cup of plant milk to the nanche and use my stick blender to pulverize these down to a thick cream. 

Cheesy Flavoring

     Once it is at the right consistency we add some flavors to make it cheesier. First I run my cheese sauce through a wire mesh strainer just to get out any of those extra fibers. Then we need some vegan butter. Next Melt about half a cup and add that into the cheese as well as half a cup of nutritional yeast then just whisk that right in. I tasted it and decided I also wanted to add some mustard, a little bit of citric acid, some lactic acid, smoked paprika, turmeric and then whisk again! I gave it another taste then added some garlic powder, mushroom seasoning and whisk. The taste is good, now let’s put it on the heat. 

Taste Test!

      While it is coming up I add two tablespoons of potato starch and whisk it consistently until it starts to thicken up. Once you see some waves start to form, turn the heat way down or pull your bowl off the heat. Then we just need to make our macaroni and cheese! Add the nanche cheese sauce to the macaroni, stir it up! Now it is time to taste! The texture is really good. It has a cheddar flavor! There is a pinch of sweetness to it. Ingredients
  

  • nanche
  • 1 tbsp vinegar
  • 1 cup plant milk
  • .5 cup vegan butter
  • .5 cup nutritional yeast
  • mustard
  • citric acid
  • lactic acid
  • smoked paprika
  • turmeric
  • garlic powder
  • mushroom seasoning
  • 2 tbsp potato starch

Instructions
 

  • Add warm water and vinegar to cup and let nanche soak to the get the sticky syrup off.
  • Remove the flesh from the seed. Add plant milk to the nanche and blend it.
  • Once it is creamy I run it through a wire mesh strainer. Then I melt my vegan butter and add it to the cheesy cream in the pot.
  • Then add nutritional yeast, mustard, citric acid, lactic acid, smoked paprika, turmeric, garlic powder, mushroom seasoning, potato starch and whisk.
  • Once it starts to thicken take it off the heat or turn the heat way down. Add sauce to macaroni and enjoy!
