This Healthy Breakfast Will CHANGE How You Think About Eggs!

Tofu Egg scramble

     Eggs are a quick breakfast. I see egg scrambles in my instagram feed every day all day long from all my gym going friends. But what if there was a quicker breakfast that you could meal prep in minutes and end up with something I feel is better than eggs. More protein, and a breakfast that will leave you feeling fuller longer and ultimately lead to better health. 

Quick Way

      We start by draining a case of extra firm tofu and squeeze out the water. Then add the whole block of tofu to a bowl with one tablespoon of tahini, one tablespoon of lemon juice, half tablespoon of soy sauce, half teaspoon turmeric, pinch of salt, tablespoon nutritional yeast, and this last ingredient isn’t necessary but if you have it add black salt. Then press and mix the tofu and ingredients together. And that’s it! This is phenomenal! I love the taste, it is super simple, no cooking! This bowl is 502 calories and has 49 grams of protein! 

Meal Prep Way

     If you want this to be meal prepped, get three blocks of extra firm tofu. Then put a large non-stick pan over some heat with about a tablespoon of olive oil. Then drain the tofu, give them a good squeeze. Toss the tofu into the pan along with two and a half teaspoons of turmeric, two teaspoons garlic powder, a teaspoon onion powder, a tablespoon nutritional yeast, a teaspoon of black pepper, big pinch of salt, tablespoon soy sauce, and a third cup of soy milk. Then mix, heat, and keep it at a simmer for about five minutes.

Taste Test

     Then personally I like to throw in some spinach and maybe some green onion. I also add in another tablespoon of olive oil then we just need to mix it up and break it down. Once it is all done I drop it into four separate containers. These bowls come out to 399 calories, over 34 grams of protein, 23 grams of fat and 12 grams of carbs. You can eat it hot or cold! And you can add whatever you like to it!

  • 1 block extra firm tofu

  • Add tofu to pan along with turmeric, garlic powder, onion powder, nutritional yeast, black pepper, salt, soy sauce, and soy milk.
  • Mix, heat and simmer for 5 minutes. Add another tbsp olive oil, mix everything and break it down. Separate into 4 containers.
