This Is The Best Vegan Sandwich

     This is one of the best sandwiches I’ve ever had. I’m going to start making it all the time. This sandwich is incredibly refreshing but also mildly spicy, and it’s pretty easy to make! I recently traveled to New Orleans and kept seeing a “crawfish salad roll” on menus there. So I thought, I can make that, using mushrooms! Cook The Mushrooms

     I start with two pounds of white button cap mushrooms. Then I give them a quick wash, just with water. We want to make sure the dirt is removed because we are going to use the whole stem and cap of the mushrooms. Pop the stems off then break the mushrooms into small bits, place the bits in a pot. This is a lot of mushrooms, probably enough for about eight sandwiches. Place those on the stove top, cover them with salt, and mix in some seaweed. Now I pour in enough water to almost cover them, set the heat on high, bring them to a boil then let them simmer down until the water is gone.

Sauce Time

     Time to make the sauce. In a bowl I add one chopped green onion, one and a half tablespoons of minced Italian parsley, two stalks of minced celery, two minced cloves of garlic, the juice of one whole lemon, a tablespoon of prepared horseradish, two tablespoons of dijon mustard, a half tablespoon of white wine vinegar, a teaspoon of hot sauce, a half cup of vegan mayo, a quarter teaspoon of cayenne pepper and some cajun seasoning. Now you can stir this, cover it up, and toss it in the fridge until the mushrooms are almost done.

Finishing Touches

     I add some olive oil into the pot of mushrooms and stir them around. I allow them to cook until they are done steaming. Once they are done, our sauce is nice and cold. Add the mushrooms into the sauce bowl, stir them around well. Now cover it back up and put it in the fridge again until the mushrooms are cold as well.

      Now I get my buns ready, butter up a hot pan, and toast the buns on each side. Our mushrooms should be cold at this point. Fill up the buns with the mushroom salad. I topped mine with some green onions and more hot sauce. Wow! These look amazing! The flavor is awesome, it’s so refreshing! It could remind you of a lobster roll or a crawfish roll. The mushroom bite is great. You can taste the hints of lemon and spices. This feels so good to eat, it’s the best vegan sandwich! Watch the full video here!

Ingredients
  

  • 2 lbs white button cap mushrooms
  • salt
  • seaweed
  • 1 green onion
  • 1.5 tbsp Italian parsley
  • 2 stalks of celery
  • 2 cloves of garlic
  • 1 whole lemon's juice
  • 1 tbsp prepared horseradish
  • 2 tbsp dijon mustard
  • .5 tbsp white wine vinegar
  • 1 tsp hot sauce
  • .5 cup vegan mayo
  • 1/4 tsp cayenne pepper
  • cajun seasoning
  • olive oil
  • buns

Instructions
 

  • Wash the mushrooms, pop stems off, then pull everything into little bits and add it to a pot.
  • Place the pot on the stove top, cover the mushrooms with salt and add in seaweed. Add in water then set the heat high, bring them to a boil and let them simmer down until the water is gone.
  • In a bowl add chopped green onion, minced Italian parsley, minced celery, minced garlic, lemon juice, horseradish, dijon mustard, white wine vinegar, hot sauce, vegan mayo, cayenne pepper, and cajun seasoning. Stir this, cover it up, and let sit in the fridge.
  • Add olive oil to mushrooms and stir. Allow them to cook until they are done steaming.
  • Once they are done, take sauce out of fridge and dump the mushrooms in the bowl. Mix it together well, cover it up, then put it back in the fridge (just until it's all nice and cold).
  • Butter up a hot pan, toast your buns on each side, and fill them with the mushroom salad! Top with some green onion and hot sauce and enjoy!

    1. Because I am not Patricks free cookbook… Im a video creator, I do this for entertainment, not to make Patrick a free recipe guide and feed it to you step by step. It takes me 50-60 hours to test, film, edit and post these recipes and writing them out and typing them into instagrams tiny little description box is something im just not interested in spending another hour doing… Im sorry it’s annoying, but so are comments like these 😉 Why not complain about free things less and realize you are putting in 0 effort to gain that free thing and if you don’t like that free thing go find another free thing to complain about somewhere else!
