You Don’t Need Eggs

     You don’t need eggs! There are loads of reasons to give up eggs entirely. They are the most expensive they have ever been! The risks of salmonella, food poisoning, the long debated cholesterol aspect. Chickens were not meant to lay the amount of eggs that they’re laying. We have bred them into this position. They are not meant to be held in captivity, especially the way that we are doing it. So many people are eating so many eggs that we need to stick thousands of chickens all into very small areas, where things like the flu can spread rapidly. Egg Alternatives

     There are a lot of alternatives to eggs. And things that are not truly alternatives, they just work better in recipes. For example, baked items, a quarter cup of applesauce works perfectly in baked items that are meant to be sweet. Such as pancakes, waffles, muffins, they end up better in my opinion because they are more moist and they don’t try out. Tofu however can be great in place of scrambled eggs!

Tofu Scramble

     This tofu scramble is really easy, and really quick. And pound for pound, tofu is probably one of the cheapest proteins. Tofu is usually sold in blocks, found in most grocery stores. It’s about $1.75 a block or .38 cents a serving (which is currently far cheaper than eggs). You are going to get less calories, more protein, less fat, more fiber, less cholesterol, more iron and more calcium.

     This is so simple, you just throw your extra firm tofu block into a hot pan, I break it apart with my spatula and cook it. You can add whatever seasonings you like, season it like an egg! I added some garlic powder, salt, pepper and then for the yellow color I just added a little bit of turmeric. It doesn’t taste exactly like scrambled eggs but it tastes good on its own! Ingredients
  

  • 1 block extra firm tofu
  • garlic powder
  • salt
  • pepper
  • turmeric

Instructions
 

  • Add tofu block to hot pan, break/chop it apart with spatula.
  • Add garlic powder, salt, pepper, turmeric (for color), mix and cook!
