Upgrading Beyond Sausage and JUST Egg to a Vegan Sausage McMuffin

Ingredients
- any plant based english muffin
- any plant based american cheese
- 4 pack Beyond Sausage Bratwurst flavor
- Maple syrup
- 1/2 tsp onion powder
- 1/2 tsp sage
- 1/2 tsp thyme
- 1 tsp brown sugar
- kosher salt
- Black Pepper
- vegan butter
- for egg
- Just egg
- Firm Tofu
- Black Salt
Instructions
- Thaw Beyond Sausage
- Drain Tofu and press out water
- Cut 3 slices out of tofu then using a 3″ ring or mason jar lid cut out circles
- cut out 1.5″ egg yolk circle
- brush top of tofu with pinch of black salt (season sparingly)
- heat medium skillet to medium heat and add 1 dollop of butter.
- place tofu then pour in just egg into yolk hole and fill half way
- stir “yolk” with pan to help scramble in yolk hole
- flip “egg” scamble again then fill the rest of the way up
- continue filling with just egg until fully cooked though
- Remove egg from heat and add to sandwich
- for the Sausage
- Remove casing
- add all sausage seasonings, syrup, and mix together well
- Shape into patties
- fry in skillet and enjoy
