Shredded Wheat Nugget
Can you make vegan chicken nuggets using cereal? I have an idea that you can, using cornflakes as the base. I’ll try using shredded wheat and cornflakes. First the cornflakes. I have a cup and a half of cornflakes measured out. But I remove half a cup and mash it up because different sizes of flakes will give you different textures and that will add to the realism of the chicken. Cereal Mix
Then I add the mashed flakes back with the rest. To the flakes I add one tablespoon of potato starch, two tablespoons of methylcellulose, two tablespoons of nutritional yeast, one tablespoon of mushroom seasoning, a half tablespoon chicken flavoring broth mix and one cup of cold water. Then I mix that up and add a teaspoon of olive oil. Mix it again and then cover it and let it sit for about twenty minutes.

Binders
For the shredded wheats I used the exact same ingredients, same measurements. But it came out a lot thicker! Then I covered it up and let it sit too. Now I’ll make my batter. In a bowl I add a cup of flour, some garlic powder, parsley, smoked paprika, salt and crushed black pepper. I whisk this all together. Now we need a second bowl with cornflakes. I add those cornflakes to a small food processor and pulse until it is a fine consistency. Now we need a wet binder, I will be using just egg.

Forming Nuggets
To form these, I go from the nuggets, into the flour mixture, into the egg mixture, then into the cornflake mixture then onto a baking sheet! I make about six or seven nuggets of each type. Once they are all done I cover them with a towel and put them into the freezer for twenty minutes. Now I add some vegetable oil into a deep pan, and turn it to medium heat, bring it to 360ºf. Then add the nuggets to the fryer and cook until they are a rich brown. When I pull them out I add some salt.

Taste Test
These taste great! Like real chicken nuggets! They don’t look exactly like a chicken nugget. This came out great. You should give it a try! The shredded wheat vegan chicken nuggets were just a little better than the cornflake nuggets! Watch the full video here!

Ingredients
- 1.5 cup shredded wheat cereal
- 1 tbsp potato starch
- 2 tbsp methylcellulose
- 2 tbsp nutritional yeast
- 1 tbsp mushroom seasoning
- .5 tbsp chicken flavoring broth mixture
- 1 tsp olive oil
- 1 cup flour
- garlic powder
- parsley
- smoked paprika
- salt
- black pepper
- cornflakes
- just egg
- vegetable oil
Instructions
- Measure out shredded wheats, remove some and mash them, add them back with the rest.
- Then add in potato starch, methylcellulose, nutritional yeast, mushroom seasoning, chicken flavoring broth mix, and cold water. Mix this up, then add in olive oil and mix again. Cover and let sit for 20 minutes.
- In a bowl add flour, garlic powder, parsley, smoked paprika, salt, and crushed black pepper. Whisk together.
