Chickpea and Black Bean Cookie Recipes

     I have made a lot of things out of chickpeas, usually to add more protein, more fiber, to make things more nutrient dense and just because I really like chickpeas. Today I will be making chickpea chocolate chip cookies! They are gluten free and so good. I’m going to make them two different ways, a black bean cookie, and a chickpea cookie. Black Bean

     First of all let’s drain and rinse our black beans. Then we are going to toss them into a food processor and pulse them up. Now we are going to add in a cup of peanut butter, then five tablespoons of sugar, one teaspoon of vanilla extract, a teaspoon of baking soda, a quarter teaspoon of salt, and then process this together. At this point, I take out the blade and add in the chocolate chips. We probably need half a cup of chocolate chips total, add those in and give it a mix. I’m going to get a lined baking sheet and scoop out my cookies, round and flatten them with my hands onto the sheet. 

Chickpea

     I got the oven preheated for 350ºf. Toss the cookies in and let them bake for around ten minutes. When they are done baking I pull them out and let them rest for a few minutes. Add a little salt to them, and put them on a wire rack. Next we will start on our chickpea cookies. Drain and rinse the can of chickpeas, toss them into the food processor and pulse them together for just a minute. Now we need to add about half of a cup and one tablespoon of your favorite nut butter. I’m using cashew butter. We also need to add a quarter cup of rice flour, five tablespoons of sugar, one teaspoon vanilla extract, a teaspoon baking soda, and a quarter teaspoon of salt.

Last Steps!

     Now just pulse this together. Take the blade out, add the half cup chocolate chips. As long as your baking sheet has cooled, ball up the dough and add it on. We will get about twelve cookies. Same thing, toss them into the oven, bake them for around twelve minutes. Take them out, salt them, let them cool on a wire rack. These are super gooey, soft, and cake-y. These are delicious! Ingredients
  

Black Bean Cookies

  • 1 can black beans
  • 5 tbsp sugar
  • 1 cup peanut butter
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • .5 cup chocolate chips

Chickpea Cookies

  • 1 can chickpeas
  • 1/2 cup + 1 tbsp peanut butter
  • 1/4 cup rice flour
  • 5 tbsp sugar
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt

Instructions
 

Black Bean Cookies

  • Drain and rinse black beans then add them to food processor and pulse. Add peanut butter, sugar, vanilla extract, baking soda, salt then pulse again.
  • Remove the blade and add in chocolate chips, mix. Add cookies to lined baking sheet.
  • Bake at 350ºf for 10 minutes.
  • Take them out, salt them, and let rest on wire rack.

Chickpea Cookies

  • Drain and rinse chickpeas then add them to food processor and pulse for a minute. Add nut butter, rice flour, sugar, vanilla extract, baking soda and salt. Pulse.
  • Remove the blade, add chocolate chips. Add the cookies onto the cooled lined sheet.
  • Bake at 350ºf for 12 minutes. Take them out, salt them, and let rest on wire rack.
