Jackfruit Pulled Pork
The jackfruit is a large fruit from the jack tree. A single jackfruit tree can produce two to three tons of fruit a year! When you roast and cover a jackfruit in bbq sauce it surprisingly tastes just like pulled pork! Let’s get this jackfruit ready. Fruit Prep
The inside of the jackfruit is really sticky, so I coat my knife with non-stick spray and spray the outside of the jackfruit a little. I cut it in half length wise. You can save the seeds to roast them if you want! I pick and remove the fibers from the fruit. I slice the halves into two more halves and remove the fruit pods and place them into a bowl. Then I wash, dry and remove any extra seed bits from the fruit.

Seasoning and Flavoring
We are going to season and flavor the fruit with about half an onion, two cloves of garlic, a teaspoon of cumin, a teaspoon paprika, a teaspoon chipotle powder, teaspoon chili powder, half teaspoon black pepper, half teaspoon salt, teaspoon vegan worcestershire, teaspoon mustard, and one and a half cups of vegetable broth. First I add my onions and garlic to a large skillet on a medium heat with about a tablespoon of olive oil. Once the onions have cooked down a bit, I add in the fruit!

Cooking
Next I add all the seasonings and let it simmer for about five minutes. Then I add in the vegetable broth. And then cover it, and let it simmer for about forty five minutes. After it has simmered I transfer it over to a foil lined baking sheet. Then I toss it into the oven at 350ºF for an hour and a half. Once it is done I remove it from the baking sheet. Ingredients
- 1 jackfruit
- 1/2 onion
- 2 cloves garlic
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chipotle powder
- 1 tsp chili powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tsp vegan worcestershire
- 1 tsp mustard
- 1.5 cups vegetable broth
- 1 tbsp olive oil
Instructions
- Coat knife with non-stick spray then cut jackfruit in half length wise. Remove fibers from fruit and place them into bowl. Wash, dry, then remove any extra seeds from fruit.
- Add onions and garlic to large skillet on medium heat with olive oil. When onions have cooked down a bit, add in fruit.
- Next add in cumin, paprika, chipotle powder, chili powder, black pepper, salt, vegan worcestershire, and mustard. Let simmer for 5 minutes.
- Add vegetable broth, cover it, and let it simmer for 45 minutes.
- Transfer it to a foil lined baking sheet then into the oven at 350ºF for 1 hour and a half. Once done, enjoy!
