Vegetarian Manapua with Mushrooms & Red Bean Paste

I wanted to go Hawaiian vegetarian style with this one and make Mushroom Manapua the hawaiian Bao! Manapua literally means delicious pork thing but like all food over time different fillings have been attempted!Today we are going to make Mushroom manapua and stick to the end for a Red Bean Manapua

Ingredients
  

  • Manapua bun ingredients:
  • 2 1/2 Cups Flour
  • 1/2 Cup Corn Starch
  • 1 Packet Active Dry Yeast
  • 1/3 Cup Sugar
  • 3/4 Cup Warm Water
  • 1/4 Cup Vegetable Oil
  • 2 tsp Baking Powder
  • Mushroom Manapua
  • 2 Large Portabella Mushrooms
  • 1 Medium Green Onion
  • 4 tsp Soy Sauce
  • 1 tsp Sesame Oil
  • 2 tsp Plum Sauce
  • Dash of Five Spice

Instructions
 

  • For the buns
  • add yeast and warm water (108ยบ) to bowl of stand mixer and allow to bloom for 5 minutes
  • mix starch, flour, and baking powder together
  • after yeast has bloomed add flour mix into yeast
  • give a quick mix then add oil and sugar
  • set mixer to low speed with a dough hook attachment and kneed until soft smooth dough ball is formed
  • remove dough ball and add to an oiled bowl. cover and let rest for 2 hours or until doubled in size
  • removed dough ball from bowl and punch out air and form back into smooth ball
  • cut into 8 and form into ball shapes
  • cover with warm damp kitchen towel and let rest for 15 minutes
  • Once rested push down on dough and roll out into palm sized circles
  • fill with choice of filling close up
  • place on parchment paper and steam for 10-12 minutes
  • enjoy
  • Mushroom filling makes 4 manapua
  • chop mushrooms and green onion
  • In a mixing bowl coat in a small amount of olive oil
  • salt and pepper
  • Oil a cast iron skillet over medium heat
  • add green onion and cook until translucent
  • add mushrooms and cook until slightly soft
  • then add sauces mix will
  • add five spice
  • simmer on meduim heat until sauce reduces and thickens
  • remove from heat and use to fill manapua
