Extra Firm Tofu
Pressed as much liquid as you can
1/4
cup
plant milk unflavored

lemon juice

salt
Instructions
I used a nut milk bag to press the tofu. Pressing and squeezing really gets this to the correct constancy as well!
Mix everything together until you get a ricotta consistency and you can form the "cheese" into a ball and it stays together
