You’re going to be surprised by Potato Sausage!

Potato Sausage

     Did you know you could make sausage out of a potato? I’m going to teach you how to do it! There are two main stars to this show and one of them is the potato. I’m using some washed fingerling potatoes, I’m leaving the skin on, but you can take it off if you like. And you can use probably just about any other potato that you like. Food Processing

     We need a food processor, or a blender/stand mixer. Add the bacon bits to the food processor. Once the bits are more fine, I grab some cilantro and parsley and I add in about a quarter cup of those to the food processor (half cilantro half parsley). Along with that I add a whole chopped shallot and three or four cloves of garlic, roughly chopped, a pinch of nutmeg, a little salt, and pepper. Pulse that a few times. Now chop up the potatoes, and toss those in, then turn it on at a low speed. 

     Once that is mixed together well, I add in one cup of gluten flour, a quarter cup of nutritional yeast, a teaspoon of psyllium husks, a teaspoon of beet root powder, a teaspoon of molasses, and a teaspoon of dulce. Then at this point I use the food processor to pulse this all together. Next I take it out and knead it by hand. Now I put it in a bowl, cover it up, and let it rest for thirty minutes.

Form The Sausage

      Time to cut and form this into sausage shapes. This made about six sausage logs. I decided to add a rice paper skin to these, which may have been a mistake. Wet the rice paper, toss on the potato log, I brush it with some oil, then wrap it in the paper. Once you have them all rolled, brush the outside with some oil, then steam them for about two or three hours. So these expanded and I assumed the rice paper would expand with them but it didn’t. 

Taste Test

     At this point I am going to wrap them up, and let them sit overnight. If you are in a hurry you could use them in about three hours! After sitting they look good and solid. Now we need to get a pan pretty hot with a little bit of olive oil. Add the sausages in and let them cook. I cooked them long enough to get the rice paper casing crispy, but I cooked them until they kind of looked like egg rolls. These are so good! If I did it again I probably would not do the rice paper skin though! These sausages have that meaty texture and bite. It’s delicious! Watch the full video here!

Ingredients
  

  • bacon bits

Instructions
 

  • Add bacon bits to food processor. Pulse. Add in cilantro and parsley, the shallot, garlic, nutmeg, salt, and pepper. Pulse again. Chop up the potatoes and add them in as well, turn it on to a low speed.
  • Once it is mixed well add in gluten flour, nutritional yeast, psyllium husks, beetroot powder, molasses, and dulce. Pulse again.
  • Take it out and knead it by hand. Then put it in a bowl, cover it, and let it rest for 30 minutes.
  • Cut it into sausage shapes, about 6 of them. Steam them for 2-3 hours.
  • Wrap them up, and let them sit overnight.
  • Get a pan pretty hot with some olive oil. Add in the sausages and let them cook. Enjoy!
