Tempeh Salad Sandwich

Shredding
The first thing we need for our tempeh sandwich is a carrot. I’m not going to peel it, I just chop off the ends. Then I wash it and then shred it! I shred almost the whole carrot very finely into a bowl. The carrot shavings make the sandwich fluffy! I take out my tempeh and chop it in half. Then grate it in with the carrot using the large side of a cheese grater.

Seasoning
After that is fully grated I add in a tablespoon of plant based mayo, a tablespoon of spicy brown mustard and then mix. Once it is completely mixed I add in a big pinch of salt, some fresh cracked black pepper, and a bit of pickle juice for flavor. Mix it again then give it a taste.

Tasting
Throw it on a sandwich and it is really good! It is similar to a chicken salad sandwich or tuna salad sandwich! I spread some mustard onto sourdough bread then add on the tempeh mix! I also like to top it with micro greens or sprouts. You can add pickles or whatever you like! This has forty five grams of protein! Watch the full video here!

Ingredients
- 1 large carrot
- tempeh
- 1 tbsp plant based mayo
- 1 tbsp spicy brown mustard
- pinch salt
- pinch black pepper
- pinch pickle juice
Instructions
- Chop the ends off of carrot, wash it, then finely shred it into a bowl. Chop tempeh in half, then grate each half into the bowl with the carrot.
- Add in mayo, and spicy mustard then mix. Add in salt, black pepper, pickle juice and mix again! Add mixture to a sandwich, enjoy!
