Vegan Burger
Gluten works really well to make great meat replacements. I believe I have come up with a fantastic recipe for a veggie burger! Most of this recipe is going to be vital wheat gluten and pea protein. And we will be making a majority of this recipe in the blender or food processor. We are going to start with our dry ingredients then we’ll add the liquids. Blending
We are going to start by adding two grams of beetroot powder to the blender as well as one gram of cocoa powder, five grams nutritional yeast, five grams mushroom extract, thirty grams of pea protein, a touch onion powder, and a touch garlic powder. Then I put the lid on and give it a quick pulse to get everything mixed together. Then I add in sixty milliliters of water, twenty milliliters of white distilled vinegar, forty milliliters of soy sauce, a drop of liquid smoke, and a touch of molasses.

At this point I’m going to scrape down the sides of the blender. Then pulse it until it turns into a thick paste. I add in 200 grams of vital wheat gluten, then quickly pulse and grind it up. Then I also add almost an additional sixty milliliters of water, and I keep adding water until it becomes the consistency that I want. Once I do like the consistency I keep the lid on the blender and put it right into the fridge for just a few minutes. In the past I have used these coconut oil pucks, they are great for marbling fat in any sort of ground beef recipe.

Forming the Meat
I have made the coconut oil pucks using coconut oil, a little bit of water and methylcellulose. So I take a box grater to the puck and just grate in big chunks of coconut oil, to mimic fat. Then I take the blender out of the fridge and kind of break the meat into pieces and add in the coconut meat flakes. Now put the lid on and pulse a few times to mix. Once mixed, I drop all the meat onto a piece of parchment paper. I take a meatball sized amount of meat and work it into a burger like patty. Once the steamer is steaming, add a patty or two in for about twenty minutes.

Taste Test
After they have all steamed, I wrap them up and put them into the fridge to sit overnight! The next day I got my iron skillet heated up. I sprinkle the patties with some McCormick’s grill mates hamburger seasoning. Then add my burgers to the skillet and cook them! Then get your burger ready, however you prefer! You’ve Never Had a Vegan Burger Like This Before
Ingredients
- 2 grams beetroot powder
- 1 gram cocoa powder
- 5 grams nutritional yeast
- 5 grams mushroom extract
- 30 grams pea protein
- touch onion powder
- touch garlic powder
- 20 ml white distilled vinegar
- 40 ml soy sauce
- drop liquid smoke
- touch molasses
- 200 grams vital wheat gluten
- 1 coconut oil puck
Instructions
- Add beetroot powder, cocoa powder, nutritional yeast, mushroom extract, pea protein, onion powder, and garlic powder to the blender and mix.
- Add water, vinegar, soy sauce, liquid smoke, and molasses. Pulse until it becomes a thick paste. Add more water until it is correct consistency.
- When consistency is right, keep the lid on and put it in the fridge. Use box grater to grate coconut oil puck into big chunks. Take the blender out and break up the meat into pieces.
- Add the coconut flakes to the meat, pulse a few times to mix. When mixed add the meat to parchment paper. Form patties. Put patties in the steamer for 20 minutes.
- After they steamed, wrap them up and let them sit in the fridge overnight.
- Sprinkle the patties with seasoning, add them to the skillet and cook them! Enjoy!
