Broth
Clean and
Add Everything To large Stock pot
Bring to Rolling Boil for 6 hours. Refill water for the first 5 hours or so, boil down to 10 cups in the end
Scallion (green onion oil)
Simmer together for 10 minutes
Let cool and bottle
Chashu Vegan Pork
In the pan with the green onion oil sear the outside of your vegan meat
Once seared add all the braising sauce ingredients and vegan meat to a large pot or dutch oven
Bring to a simmer over low heat, stir and cover. Cook for 2 hours
Remove the “ham” and slice into thick slices for your soup
You can now use that braising sauce to season a tofu or “egg”
Let rest until broth is ready
Soup
Once broth is ready strain veggies out for the broth and cook your noodle of choice
To plate your ramen add a bit of the braising sauce and some of your scallion oil to the bottom of your bowl. You can also add any chili paste or seasonings at this point.
Ladle in broth, then add your noodles and the rest of your toppings of choice!
