Meat side
Add chickpeas and everything from meat side to blender or food processor and process until very smooth.
Pour mixture into bowl of stand mixer
add 1 cup of vital wheat gluten to mixer and kneed on a low speed until well combined 5-10 minutes
Dived ball in two and let rest while making fatty side
For fat side
add vital wheat gluten and aquafaba to stand mixer and allow to kneed on low speed for 5-10 minutes
stretch out meat side to be 2 even pieces that are as long as bacon and around 5-6 inches wide and less than 1/2" thick
lay fat on top of meat side and stretch to cover
lay second meat side on top
then lay final fat piece on top of that and stretch to cover.
Salt and pepper all sides
wrap in plastic wrap or bees wax and place in freezer until firm
once firm remove from freezer and wrap and slice very thin bacon slices
Fry on low heat with oil of choice flipping once until slightly brown and crispy
