WAY Better Chick-fil-a Cauliflower sandwich

Ingredients
  

  • 1 head cauliflower

Brine

  • 2 cups water
  • 1 tbsp kosher salt
  • 1/4 cup sugar
  • 1/2 tsp MSG or mushroom seasoning or double the nutritional yeast
  • 1 tsp paprika
  • 1 crack black pepper
  • 1/2 tsp mustard powder
  • 1 tbsp nutritional yeast
  • 1 tbsp vinegar

Seasoned flour (batter)

  • 1 cup all purpose flour
  • 1 tbsp Sugar
  • 1 pinch Kosher Salt
  • 1/2 tsp MSG
  • 1 tbsp rice flour or soy milk powder
  • 1/2 tsp rice flour
  • 1/2 tsp baking powder
  • 1/4 tsp white pepper
  • 1/2 tsp mustard powder
  • 1/4 tsp Cayenne

"Milk" bath

  • 1 cup plant milk
  • 2 tbsp rice flour/ starch
  • 1 tbsp nutritional yeast

Instructions
 

  • Slice thin "steaks" out from the center of your cauliflower. You should be able to get 3-4 out of a large cauliflower.
  • Now in a sauce pan mix the broth ingredients, add the cauliflower steaks, bring to a boil, then turn off the heat and let "brine" for 10 minutes.
  • After 10 minutes remove cauliflower and place on wire wrack to cool and dry
  • while waiting for those to cool, add oil to a high side walled pan or dutch oven and heat to 325ยบ f
  • Mix together the seasoned flour ingredients on a large plate
  • Mix together the milk bath in a large bowl
  • Use a vegan butter and butter your buns, and toast. Set aside once toasted.
  • Now using a fork or a spoon sprinkle some of the milk mixture into the flour to create little clumps of flour
  • dip your cauliflower carefully into the milk, then press into the flour, making sure all the crevices are filled
  • fry for 4-5 minutes or until golden brown!
