Realistic Tuna Melt from Mushrooms

Ingredients
  

  • 1 Lion's mane mushroom
  • 1 sheet nori
  • pinch salt
  • pinch olive oil
  • .5 large carrot
  • 2 sticks celery
  • .5 red onion
  • pinch fresh dill
  • pinch lemon zest
  • 1 squeeze lemon juice
  • 2 tbsp vegan mayonnaise
  • 2 slices thick cut white bread
  • 3 slices vegan cheese
  • 3 slices tomato

Instructions
 

  • Pull apart your mushroom into shreds. Add into bowl with chopped nori.
  • Add salt, olive oil, and mix.
  • Get oiled pan on stove at medium to high heat. Add ingredients, let them brown.
  • Toss around in pan for a few minutes then add to a bowl.
  • Add your chopped veggies into your bowl with some lemon zest, a squeeze of lemon juice, then mix.
  • Grab bread, spread vegan mayonnaise on slices, add salt, then get your pan hot.
  • Toast bread in the pan, add vegan cheese slices. Add water around bread to steam it.
  • Add the rest of your toppings.
