Making Lewis Hamilton's Favorite Dish

Athlete Lewis Hamilton eats entirely plant-based and is in incredible shape! He says he loves vegan curries but stays away from them because they are fattening. So I decided to make a low fat, protein packed vegan curry!

Ingredients
  

  • 1 sweet onion
  • 1 1 inch cube of ginger
  • 2 serrano peppers
  • 2 tbsp olive oil
  • 1 head of garlic
  • 2 tsp cumin
  • 1 tsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp sweet paprika
  • 1 tsp garam masala
  • 8 ounces tomato sauce
  • 1 block tofu extra firm
  • lime juice
  • rice
  • .5 tsp fennel seeds
  • 1 tsp agave
  • .5 cup peas
  • silken tofu

Instructions
 

  • Chop up sweet onion, then mince ginger and serrano peppers.
  • Get a large skillet on low heat with olive oil. Once olive oil is simmering add in the veggies.
  • Once veggies are translucent, add in minced garlic as well.
  • Then add in cumin, curry powder, ground turmeric, sweet paprika, and garam masala. Mix everything together. Add in tomato sauce then continue mixing.
  • Chop block of extra firm tofu into cubes and add to bowl as well as lime juice and salt.
  • Add tofu to air fryer for fifteen minutes at 380ºf.
  • Get rice in the rice cooker and add in fennel seeds.
  • Add silken tofu to a bowl as well as the agave, lime juice, and olive oil. Blend this together.
  • Add peas to curry sauce, then the tofu, and the cream. Carefully stir everything together then plate!
