Using a blender or food processor mix 3/4 cup of water with the sage, onion powder, sugar and Alginate
Blend on low speed until combined and you have a alginate gel, set aside
add calcium to the remaining 1/4 cup water
Using a stand mixer with dough hook combine Wheat Gluten with pea protein and mix
add the oil to the alginate gel and pour into stand mixer while mixing
once combined add calcium mixture and kneed for 10-15 minutes
let rest for 15 minutes
kneed for at least 20 minutes
remove dough and roll into log
wrap tightly with wax paper and then foil
steam for at least 2 hours
