Seitan or Wheat Gluten is something I didn’t think could really be tinkered with. I have seen so many different recipes but the end result is always pretty simular. Its a great meat replacement… So how can we make Seitan better? I found a way

Ingredients
  

  • 1 Cup Vital wheat gluten
  • 1/2 Cup Pea Protein or any protein
  • 1 cup of water
  • 2 tsp sage
  • 1 tsp sugar
  • 1/2 tsp Onion Powder
  • 1 tsp Sodium alginate
  • 1 tsp Calcium Chloride
  • 1 tbsp Lightly flavored oil

Instructions
 

  • Using a blender or food processor mix 3/4 cup of water with the sage, onion powder, sugar and Alginate
  • Blend on low speed until combined and you have a alginate gel, set aside
  • add calcium to the remaining 1/4 cup water
  • Using a stand mixer with dough hook combine Wheat Gluten with pea protein and mix
  • add the oil to the alginate gel and pour into stand mixer while mixing
  • once combined add calcium mixture and kneed for 10-15 minutes
  • let rest for 15 minutes
  • kneed for at least 20 minutes
  • remove dough and roll into log
  • wrap tightly with wax paper and then foil
  • steam for at least 2 hours
  • Enjoy
