Lets CHANGE The Way YOU Make SEITAN For GOOD!
Seitan or Wheat Gluten is something I didn’t think could really be tinkered with. I have seen so many different recipes but the end result is always pretty simular. Its a great meat replacement… So how can we make Seitan better? Ingredients
- 1 Cup Vital wheat gluten
- 1/2 Cup Pea Protein or any protein
- 1 cup of water
- 2 tsp sage
- 1 tsp sugar
- 1/2 tsp Onion Powder
- 1 tsp Sodium alginate
- 1 tsp Calcium Chloride
- 1 tbsp Lightly flavored oil
Instructions
- Using a blender or food processor mix 3/4 cup of water with the sage, onion powder, sugar and Alginate
- Blend on low speed until combined and you have a alginate gel, set aside
- add calcium to the remaining 1/4 cup water
- Using a stand mixer with dough hook combine Wheat Gluten with pea protein and mix
- add the oil to the alginate gel and pour into stand mixer while mixing
- once combined add calcium mixture and kneed for 10-15 minutes
- let rest for 15 minutes
- kneed for at least 20 minutes
- remove dough and roll into log
- wrap tightly with wax paper and then foil
- steam for at least 2 hours
