Mix all the dry ingredients for the breading then mix in coconut milk 1/4 cup at time until you have a thick pancake batter.
Dunk the nuggets into the batter and remove to a lined baking sheet
Place in freezer for at least 2 hours.
Once frozen heat a high walled pan or dutch oven with your frying oil of choice to 350ยบ f ( I use vegetable oil or canola oil
Fry until golden brown and place on a wire rack, sprinkle with salt and place in a warmed oven/microwave/toaster oven to keep warm. You want to eat this warm
If you make a big batch you can freeze them and reheat in toaster oven or air fryer and they come out great! These get better on their second cook actually!
