Have you ever thought of replacing meat with sweet potato? I have a sweet potato taco recipe, and a sweet potato curry recipe! They are both quick and easy!
Cut potato into strips then toss in olive oil, cumin, chili powder, salt, and black pepper.
Mix, then put in the air fryer at 425ºf for 15 minutes.
In container mix together vegan mayonnaise, avocado, lime, salt chipotle chili powder, and garlic powder. Once smooth, let sit in refrigerator.
Add tortillas to air fryer for a moment. Heat up lentils. Spread avocado sauce onto tortillas, then add lentils, red onion, salt, potatoes and enjoy!
Curry
Wash and cube potatoes. Toss in some olive oil and salt then add onto a lined baking sheet.
Preheat oven for 425ºf.
Let bake for 20 minutes. In dutch oven over a medium heat add some olive oil.
Drain can of diced tomatoes and add tomatoes to dutch oven. As well as chopped red onion. Stir and let cook for 7-10 minutes.
Lower the heat and add in cauliflower then garlic and ginger.
Add in curry powder, garam masala, sweet paprika, cumin, salt, and black pepper.
Stir everything well, then take the potatoes out of the oven and add them to the dutch oven along with the coconut milk. Stir then let this simmer for 20 minutes. Before it is done add in spinach and a squeeze of lime then enjoy!
