I’m Putting Sweet Potato in EVERYTHING Lately!

      I have been eating sweet potatoes every day since the beginning of the year! It’s not a potato diet, I am just learning to enjoy potatoes and whole veggies a lot more! Today I will be teaching you how to make sweet potato curry and sweet potato tacos! If you like this recipe check out this one too! and this one!

Sweet Potato Tacos

     But first, tacos. I am just using a regular jewel sweet potato for these. Cut the potato into strips then toss them in a bit of olive oil, cumin, chili powder, salt and black pepper. Mix everything up, then put them into the air fryer at 425ºf for fifteen minutes. I’m making avocado cream to go in my tacos. In a container I add some vegan mayonnaise, half of an avocado, some lime, a pinch of salt, a pinch of chipotle chili powder, and garlic powder. I blend this all together with an immersion blender until it’s smooth. When you like the consistency, toss it in the refrigerator. 

     The potato strips are done! I toss my tortillas right into the air fryer to crisp them up a bit. For the base of the taco I’m using some lentils, I heat those up. The tortillas are ready so I spread some of the avocado cream on them. Then I spread out the hot lentils, some minced red onion,  add a bit of salt, added the potatoes ( I added about three or four big strips on each), some more avocado cream, cilantro and boom! These came out looking and tasting amazing! Sweet potatoes are good for digestion and they’re highly nutritious!

Sweet Potato Curry

     Now for our curry! For this I’m using Japanese sweet potatoes. I wash and cube two of them, then add them to a boil with a little olive oil and salt. Now onto a lined baking sheet. Then add them to a preheated oven at 425ºf, for about twenty minutes. While those bake, I’m going to toss a dutch oven onto the stove, over a medium heat with a little bit of olive oil. Now I drain a can of diced tomatoes (I use fire roasted ones because that’s what I prefer). Add the tomatoes to the dutch oven as well as half of a chopped red onion. Stir that sound and let it cook for about seven to ten minutes. 

     Then we lower the heat, and add in a cup and a half of cauliflower. Next I add in about four cloves of garlic that I sliced up, along with a knob of ginger that I also sliced into little cubes. Now we need to add one tablespoon of curry powder, one tablespoon of garam masala, a half tablespoon of sweet paprika, a half teaspoon of cumin, a pinch of salt and a few cracks of black pepper. Around now the potatoes are done, I add those directly into the dutch oven. Mix this up and allow it to cook for a moment before adding two cans of coconut milk and stir.

Sooo Tasty!

     I let this simmer for about twenty minutes. Right before it’s done I add in a big handful of spinach and a squeeze of lime. Now it’s ready to serve! I plated this with some rice and a bit of cilantro on top. It looks amazing! It’s sooo smooth! And it has a great sweet taste. All the flavors go together beautifully. There’s lots of fibers in this dish. This is an awesome, comforting dinner. Watch the full video here!

Ingredients
  

Tacos

  • 2 jewel sweet potatoes
  • olive oil
  • pinch cumin
  • pinch chili powder
  • salt
  • pinch black pepper
  • vegan mayonnaise
  • .5 avocado
  • pinch lime
  • pinch chipotle chili powder
  • 2 tortillas
  • lentils
  • red onion
  • cilantro

Curry

  • 2 Japanese sweet potatoes
  • olive oil
  • salt
  • 1 can diced tomatoes
  • .5 red onion
  • 1.5 cup cauliflower
  • 4 cloves garlic
  • 1 knob ginger
  • 1 tbsp curry powder
  • 1 tbsp garam masala
  • .5 tbsp sweet paprika
  • .5 tsp cumin
  • pinch black pepper
  • 2 cans coconut milk
  • handful spinach

Instructions
 

Tacos

  • Cut potato into strips then toss in olive oil, cumin, chili powder, salt, and black pepper.
  • Mix, then put in the air fryer at 425ºf for 15 minutes.
  • In container mix together vegan mayonnaise, avocado, lime, salt chipotle chili powder, and garlic powder. Once smooth, let sit in refrigerator.
  • Add tortillas to air fryer for a moment. Heat up lentils. Spread avocado sauce onto tortillas, then add lentils, red onion, salt, potatoes and enjoy!

Curry

  • Wash and cube potatoes. Toss in some olive oil and salt then add onto a lined baking sheet.
  • Preheat oven for 425ºf.
  • Let bake for 20 minutes. In dutch oven over a medium heat add some olive oil.
  • Drain can of diced tomatoes and add tomatoes to dutch oven. As well as chopped red onion. Stir and let cook for 7-10 minutes.
  • Lower the heat and add in cauliflower then garlic and ginger.
  • Add in curry powder, garam masala, sweet paprika, cumin, salt, and black pepper.
  • Stir everything well, then take the potatoes out of the oven and add them to the dutch oven along with the coconut milk. Stir then let this simmer for 20 minutes. Before it is done add in spinach and a squeeze of lime then enjoy!
