The Simple Veggie Burrito I can eat ALL YEAR…. seriously, I love this vegan burrito!! This burrito is based on a burrito from one of my favorite new restaurants here in Orlando called Earthy Picks. I didn’t use their recipe, because honestly I don’t know it, but I just wanted to make something that I could share with all of you!
For those of you following on my health journey, this burrito is loaded with protein and fiber and has very little fat, most of it coming from the avocado. With the quinoa, kale, and beans you get some good minerals and anti oxidants which is pretty great!
Honestly this is the burrito I could eat all year long!
