The Simple Veggie Burrito I can eat ALL YEAR 

            Today we are making a super tasty veggie burrito recipe that is inspired by a local restaurant in Orlando Florida called Earthy Picks! We are going to use ingredients similar to the ones they use in their burrito, or as they call it the “New Age Burrito”. It’s fresh tasting, easy to make and perfect to have for any meal of the day so let’s get to it!

Let’s get Saucy 

     To start off we are going to make some cilantro aioli mayonnaise. Add a half a cup of vegan mayonnaise, a tablespoon and a half of lime juice, a pinch of chili powder, cayenne pepper, a little salt, and a hefty amount of cilantro. Now once that is all together I suggest using an immersion blender for the best results but if you don’t have one or if you are making a larger portion you can use a regular blender. After it’s blended, give it a lid and set it aside in the refrigerator.

     Next up is our chipotle mayonnaise. Start with a half a cup of mayonnaise, a tablespoon and a half of lime juice, a tablespoon of tabasco chipotle hot sauce, to give it a little smokey flavor add a little smoked paprika, cayenne pepper, salt, garlic powder, onion powder, and a decent amount of smoked chipotle chili pepper. Now for this one you don’t necessarily need the immersion blender but you could use it. Same as our last mix, give it a lid and set it aside in the refrigerator.

Burrito Stuffers

     Now for the burrito!! We are going to make a black bean quinoa. Begin by rinsing about a cup of quinoa in cold water in a colander. Then add about three fourths cup of veggie broth and a cup of water to a saucepan and bring it to a boil. Next add your quinoa, some salt, cumin, and black pepper, then cover it up and let it sit for around fifteen minutes on a low heat. After that time is up add your black beans and let it cook for about two or three minutes. Then keep it covered up, take it off the heat and let it sit for at least five minutes. 

     Looks like now we are ready to make a tofu scramble. Put one package of extra firm tofu into a bowl. I like to just go in by hand and give it a good mix, really break it up. Add some garlic powder, onion powder, cumin, about a teaspoon of turmeric, a tiny bit of smoked paprika, a pinch of salt, pepper, and a squeeze of lime juice. Give that all a good mix then grab your non-stick skillet, get it nice and hot then add a touch of olive oil. Toss in your scramble and let it cook down for a while, you want it to dry up and maybe even brown a little bit. Our veggie burrito recipe is almost done!

      Lastly, our kale. Give your kale a good wash and pull the leaves off the stem. Chop it into smaller bits, throw in some salt, and these two aren’t necessary but I like to add a tiny pinch of olive oil, and a little squeeze of lemon juice. Massage all that into your kale bits.

Build that Burrito!

     Now it’s actually time to assemble our burrito! Heat up your tortilla by pan or microwave. I started by adding the kale, some avocado, our cilantro aioli, our chipotle mayonnaise, the quinoa black bean mix, some crispy fried onions, and lastly some of the tofu scramble. Add however much of each is to your liking then wrap it up! To make your burrito a little toasty add it into an already hot skillet and let it brown a little. These ingredients could also be put into a bowl if you aren’t a burrito lover!

Time to Dig In! 

     This burrito has a variety of tastes and textures to dive into. The quinoa and crispy fried onions add a nice crunch, the kale makes it taste fresh, the avocado evens everything out, you get hints of the seasonings in every bite, and the sauces bring everything together. Ingredients
  

Cilantro Aioli Sauce

  • .5 cup vegan mayonnaise
  • 1.5 tbsp lime juice
  • pinch chili powder
  • pinch cayenne pepper
  • cilantro

Chipotle Mayonnaise

  • .5 cup vegan mayonnaise
  • 1.5 tbsp lime juice
  • 1 tbsp tabasco chipotle hot sauce
  • pinch smoked paprika
  • pinch cayenne pepper
  • pinch garlic powder
  • pinch onion powder
  • smoked chili pepper
  • pinch salt

Burrito

  • 1 cup quinoa
  • 3/4 cup vegetable broth
  • 1 cup water
  • pinch salt
  • pinch cumin
  • pinch black pepper
  • black beans
  • 1 package tofu extra firm
  • pinch garlic powder
  • tsp cumin
  • 1 tsp turmeric
  • pinch smoked paprika
  • pinch salt
  • pinch pepper
  • 1 squeeze lime juice
  • 3 sticks kale leaves
  • 1 squeeze lemon juice (optional)
  • pinch olive oil
  • 1 tortilla
  • 1 avocado

Instructions
 

Cilantro Aioli Mayonnaise

  • Add vegan mayonnaise, lime juice, chili powder, cayenne pepper, salt, and cilantro to blender. Blend, then put mixture in refrigerator.

Chipotle Mayonnaise

  • Add vegan mayonnaise, lime juice, tabasco chipotle hot sauce, smoked paprika, cayenne pepper, salt, garlic powder, onion powder, and smoked chipotle chili pepper, blend, and put in refrigerator.

Burrito

  • Rinse quinoa with cold water. Add vegetable broth, water, put it in saucepan and bring to a boil.
  • Add quinoa, salt, cumin, and black pepper, then cover it and let sit for fifteen minutes on low heat.
  • Add black beans and cook for another two to three minutes. Keep it covered, take off heat, let sit for five minutes.
  • Add tofu to bowl and mix it by hand. Add garlic powder, onion powder, turmeric, smoked paprika, salt, pepper, and lime juice, then mix.
  • Heat non-stick skillet on stove, add olive oil, add in your scramble. Let it cook down, dry up and brown a bit.
  • Wash kale and pull leaves off stems, chop into small pieces add salt and if you want, olive oil and lemon juice, massage that in.
  • Heat your tortilla, add all the ingredients… enjoy!

  1. There are NO recipes to be found despite the recipe links you put up. I clicked on the link for the one for the latest video on the veggie burrito but it did not lead to a recipe. Your videos are at such a high speed I cannot begin to guess the ingredient amounts. What is behind such a user unfriendly website? It’s like you want viewers to just go in circles and not really share your recipes.

    1. Im a video maker who is a 1 person show. Its about a 70 hour a week job just to make the recipes, cook, film and edit the videos… I’m doing my best to keep the site updated. The new recipes will be getting posted soon.
