Making Burgers from Cauliflower and Walnuts is a REALLY GOOD Idea!

Walnut Cauliflower Burger

     Using cauliflower and walnuts to make a burger seems wild, but I did it with a taco and it came out really good! Let’s get started, this is going to be really easy. The first thing I do is trim up and clean the cauliflower. Then I break it down into smaller pieces. If you like this recipe you should check out this one too! and this one!

Prep

     We will probably use about half of the whole head or two cups of cauliflower. In a small food processor I pulverize the cauliflower into kind of meaty bits. I have a cup of walnuts and add half of it to the processor as well. Then process them until they have a meaty kind of consistency. Go through and see if there are any big pieces left and re-process them smaller. Dump everything into a bowl then we are going to add our binders. 

Ingredients

     So I add one teaspoon garlic powder, one teaspoon onion powder, one teaspoon smoked paprika, one tablespoon cocoa powder, one teaspoon mushroom seasoning, one teaspoon nutritional yeast, and one teaspoon black strap molasses. Then I give everything a quick mix making sure it’s mixed thoroughly. Next I add in one tablespoon of cornstarch, and two tablespoons of methylcellulose. Then with my hands I mix and squeeze it together, releasing some water from the cauliflower. 

Cook

     Then I add in about a quarter cup of water and mix that in as well as a teaspoon or two of olive oil. Next I cover it and let it sit for about thirty minutes. And it is time to turn this into patties. I’m going to use a non-stick pan and make sure my hands are slightly damp so that way they don’t stick. I season my patties with McCormick’s grill mate hamburger seasoning. I have my oven preheated to 375ºF. Let the patties cook for about thirty minutes and flip halfway through! Then I pull them out of the oven, throw them on some buns to give them a taste. They are really good! It tastes really meaty! You should give this simple walnut cauliflower burger recipe a try!   • 2 cups cauliflower
  • 1 cup walnuts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tbsp cocoa powder
  • 1 tsp mushroom seasoning
  • 1 tsp nutritional yeast
  • 1 tsp black strap molasses
  • 1 tbsp cornstarch
  • 2 tbsp methylcellulose
  • 1/4 cup water
  • 1-2 tsp olive oil
  • mccormick's grill mate hamburger seasoning

Instructions
 

  • Trim and break down cauliflower. Add to food processor with walnuts. Process and re-process any large pieces.
  • Dump everything into bowl and add garlic powder, onion powder, smoked paprika, cocoa powder, mushroom seasoning, nutritional yeast, and black strap molasses. Mix!
  • Add cornstarch and methylcellulose, mix and squeeze with hands. Add water and olive oil, mix again. Cover and let sit 30 minutes.
  • Turn mix into patties. Season patties, cook for thirty minutes (flip half way through) at 375ºF.
