One can of Chickpeas will change how you think about PIZZA

Chickpea Pizza

      This pizza is entirely made out of chickpeas.. Well almost. Not the basil, or the sauce. But the dough and the cheese is! And it’s good, like really good. Let me show you how I made the chickpea pizza. If you like this recipe, check out this one too! and this one!

Crust

     For our pizza crust, we need one can of chickpeas. Go ahead and drain them, saving the liquid, then add them to a food processor. Along with a half cup of gluten free flour, two tablespoons of arrowroot powder (or tapioca starch), a big pinch of salt, a half teaspoon of baking soda, and about a half cup of the chickpea liquid. Now process everything. I ended up adding another half cup of the chickpea liquid.

     While it’s processing I preheat my oven to 400ºf. I add a large cast iron pan into the oven. Then once it is processed nice and smooth and the oven is fully preheated, I’m going to remove the skillet from the oven, line it with a parchment paper sheet. Pour the mixture out onto the paper, and do your best to make it somewhat even. Toss it back into the oven, and let it cook for about eight minutes. 

Sauce

     This sauce is incredibly simple, I like to use a large can, twenty eight ounces of san marzano tomatoes. I add the can into the food processor along with a bit of fresh basil, salt, and a little olive oil. I pulse this a few times until it’s all processed together. You can pour it into a container and set it aside. Meanwhile, the crust should be done and it should be fairly dense but also a little airy. Remove the crust from the oven.

Cheese

     First for our cheese, we need a can of chickpeas. I dump the whole can, liquid and all, into a saucepan with a half teaspoon of baking soda, and about a quarter cup of water. Bring this to a simmer and let them cook for about fifteen minutes. From there I toss the chickpeas and the liquid into a food processor. I add in one teaspoon of lemon juice then process on high. After it has processed for a bit I added in a quarter cup of coconut oil and two teaspoons of lactic acid, to thicken it up I am also adding three tablespoons of tapioca starch, some salt, then process until it’s very smooth. I toss this into a container and set it aside for now.

Time To Eat!

     Now I am going to remove the crust from the skillet, flip it over, and start to dress our pizza. Lastly, spoon on some sauce and spread it out, then I add fairly large dollops of that cheese sauce. So now place the pizza back into the skillet then into the oven and let that cook for about fifteen minutes at 400ºf. I dress my pizza with some basil and a little olive oil. Now slice it up, and enjoy! This really tastes like pizza! 

     And the dough feels and tastes like real dough. The cheese is nice and thick, kind of gooey. This is an amazing substitute for pizza. It’s gluten free, and loaded with protein. Ingredients
  

  • 2 cans chickpeas
  • .5 cup gluten free flour

  • salt

  • fresh basil
  • olive oil
  • 1 tsp lemon juice
  • 1/4 cup coconut oil
  • 2 tsp lactic acid
  • 3 tbsp tapioca starch

Instructions
 

  • Drain the chickpeas (save the liquid). Add them to food processor with gluten free flour, arrowroot powder, salt, baking soda, and the chickpea liquid. Process everything together.
  • Preheat oven to 400ºf.
  • Add large cast iron pan to the oven. Once mixture is smooth and the oven is fully preheated, remove the pan from the oven, line it with parchment paper, and pour the mixture onto the paper. Spread it out to make it even.
  • Toss it back in the oven and let it cook for about 8 minutes.
  • Add can of tomatoes to food processor along with fresh basil, salt, and olive oil. Process together. Then pour it into a container and set it aside.
  • The crust should be done in the oven by now, you can remove it.
  • Dump the whole can of chickpeas into a saucepan with baking soda, and water. Bring this to a simmer and let them cook for about 15 minutes.
  • Add chickpeas and the liquid into a food processor with lemon juice then process it on high. Now add in coconut oil, lactic acid, tapioca starch, salt, and process again until very smooth. Then add it to a container and set it aside.
  • Remove the crust from the pan, flip it over, then add on the sauce, spread it out. Then add on dollops of the cheese. Place pizza back in pan then to the oven and let it cook for 15 minutes at 400ºf.
  • When it's done, top it with some fresh basil and olive oil then enjoy!
