Avocado Toast without the Avocado’s is AWESOME

       Today you are going to learn how to make three different avocado toast recipes, but without using any avocado! These versions are cheaper, loaded with nutrition, fiber, and more protein. Keeping you fuller, for longer! Also, you can make large batches of these recipes and throw them in the refrigerator for quick lunches or meal preps. Toast 1

     There are a lot of different ways to do this but one way is with frozen green peas. You probably already have them in your freezer! I’m only going to be making one serving so I will be using one cup of the frozen peas, and toss them into some boiling, salted water. Poach them for about three minutes. When they are done, strain out the water, and dump your peas in a large bowl. Mash them up with a fork, or toss them into a food processor. Once they are mashed nicely I add about a cap full of olive oil to them. Then I squeeze in the juice from half of a lemon.

     Now let’s not forget to get our toast prepared. Grab the bread of your choice and either throw it in the toaster or, what I like to do, toast mine on a hot pan with some olive oil. Our avocado mixture is done now and our toast should be as well! I add some of the mix onto my toast along with some thinly sliced radishes, red onion, and some black pepper. You can add whatever toppings, those are just the ones I prefer! Our pea toast is all done and it is amazing! It’s delicious, quick and easy to make, and healthy!

Toast 2

     This second version is even easier to make than the first, and it’s sweeter! The main ingredient this time is actually a can of sweet green peas. It needs to be drained, rinsed and tossed into a bowl, then forked, or mashed. This recipe is very similar to the last except these peas are way easier to mash because canned peas are much softer. I’m adding about the same amount of olive oil, and lemon juice.

     The results should look very close to the last! My canned peas’ color was just a little less bright than the frozen peas’. Again I add my mixture over top of my toast along with some thinly sliced jalapenos, some sriracha, some sour veggies, and cilantro. This came out amazing, I personally prefer this over the first. Not to mention how beautiful all the colors are, this tastes delicious, and again is a quick, healthy meal!

Toast 3

     Now for our last recipe we will actually be using lima beans! This dish turns out phenomenal and it’s low it net carbs, high in fiber, and protein. It also plays a pretty important role in your metabolism health. I drain a whole can of lima beans, then toss them into a food processor along with some green onion, spinach, a pinch of olive oil, and the juice from half of a lemon. Start processing it, until it is very smooth. They do surprise you with how smooth they turn out. It has a nice fruity taste, very similar to an avocado. It works perfectly for this toast.

     For this one I add some whole grain mustard to my toast, then my lima bean mixture, along with some sliced tomato, red onion, and some thinly sliced green onion. Now there you have it, our last recipe! This toast is very filling, and very nutritious. It’s shockingly delicious, anyone who loves avocado toast, would love this! Ingredients
  

Pea Toast 1

  • 1 cup frozen peas
  • pinch olive oil
  • juice from .5 lemon
  • 1 slice bread
  • pinch black pepper
  • couple slices red onion
  • couple slices radish

Pea Toast 2

  • 1 slice bread
  • couple slices jalapeno
  • pinch sriracha
  • couple slices sour veggies
  • pinch cilantro
  • 1 can sweet green peas
  • pinch olive oil
  • juice from .5 lemon

Lima Beans Toast

  • 1 can lima beans
  • 1 green onion
  • spinach
  • 1 slice bread
  • pinch olive oil
  • juice from .5 lemon
  • pinch whole grain mustard
  • couple slices tomato
  • couple slices red onion

Instructions
 

Pea Toast 1

  • Toss peas into salted boiling water.
  • Poach for three minutes.
  • Strain and mash peas.
  • Add olive oil, and lemon juice.
  • Get toast ready.
  • Add mixture to toast, along with radish slices, red onion slices, and black pepper.

Pea Toast 2

  • Drain, rinse, and mash peas.
  • Add olive oil and lemon juice.
  • Add overtop of toast with sliced jalapenos, sriracha, sour veggies, and cilantro.

Lima Bean Toast

  • Drain lima beans, add them into food processor along with green onion, spinach, olive oil, and lemon juice.
  • Process until smooth.
  • Add whole grain mustard to toast, then our lima bean mixture, along with sliced tomatoes, red onion, and green onion.
