Tofu Mozzarella

Ingredients
  

  • 1 block firm tofu
  • 1 tsp salt
  • 1 tsp lemon juice Use this if you're not going to use lactic acid
  • 1/2 tsp lactic acid
  • 1 tsp olive oil
  • 1 tbsp Plant milk I use oat milk

Instructions
 

  • Mix it all together and refrigerate for at least 30 minutes

Tofu Feta

Ingredients
  

  • 1 block extra firm tofu
  • 1/4 cup olive oil
  • 1 tbsp Lemon Juice or half amount lactic acid
  • 1 tbsp nutritional yeast
  • 1/2 tsp oregano
  • 1 pinch salt
  • 1/4 cup apple cider vinegar
  • 1 tbsp plant milk

Instructions
 

  • Mix it all together and refrigerate for at least 30 minutes

Tofu Ricotta

Ingredients
  

  • 2 Block Extra Firm Tofu Pressed as much liquid as you can
  • 1/4 cup plant milk unflavored
  • 2 tsp lemon juice
  • 1 pinch salt

Instructions
 

  • I used a nut milk bag to press the tofu. Pressing and squeezing really gets this to the correct constancy as well!
  • Mix everything together until you get a ricotta consistency and you can form the "cheese" into a ball and it stays together
