Tofu Mozzarella
Ingredients
- 1 block firm tofu
- 1 tsp salt
- 1 tsp lemon juice Use this if you're not going to use lactic acid
- 1/2 tsp lactic acid
- 1 tsp olive oil
- 1 tbsp Plant milk I use oat milk
Instructions
- Mix it all together and refrigerate for at least 30 minutes

Tofu Feta
Ingredients
- 1 block extra firm tofu
- 1/4 cup olive oil
- 1 tbsp Lemon Juice or half amount lactic acid
- 1 tbsp nutritional yeast
- 1/2 tsp oregano
- 1 pinch salt
- 1/4 cup apple cider vinegar
- 1 tbsp plant milk
Instructions
- Mix it all together and refrigerate for at least 30 minutes

Tofu Ricotta
Ingredients
- 2 Block Extra Firm Tofu Pressed as much liquid as you can
- 1/4 cup plant milk unflavored
- 2 tsp lemon juice
- 1 pinch salt
Instructions
- I used a nut milk bag to press the tofu. Pressing and squeezing really gets this to the correct constancy as well!
- Mix everything together until you get a ricotta consistency and you can form the "cheese" into a ball and it stays together

Tried making the ricotta for a vegan Thanksgiving lasagna. It had like zero flavor whatsoever, so I keep adding lemon juice and salt and more lemon juice, and still nothing. Finally started calling other family members in to try, and everyone kept saying the same thing. No flavor. About to give it up and toss it all when my poor youngest said it was, quote, “elephant sour.” And that’s the story of how I found out the day before Thanksgiving that my house has covid. Made a new batch, and now I’m just fasting and praying I can taste it tomorrow, because all taste buds left standing approved. Thanks for sharing and for helping us with our diagnosis! 🤣
