I was in the mood for Mac and cheese the other day but I didn’t want to make my normal not so great for you vegan Mac and cheese and a LOT of the time ill be honest I make it, toss it in the fridge and have it the next day cold straight out of the fridge so I figured why not make it that way!
Turns out that might be pretty helpful in making it healthier.

When Finding Tasty Vegan Cheese Seems *IMPOSSIBLE* MAKE IT with just 2 ingredients. You can make your own cheese base using 2 ingredients that will easily make just about any kind of cheese you want. I made this cheese base and then used it to make a super smooth and creamy cream cheese, but also used it to make 2 different mozzarella cheese.
This can be tuned and tweaked to make vegan American style cheese, or even vegan cheddar.

No one would KNOW this Nacho Cheese was VEGAN… I recently tried the NEW Taco Bell Vegan Crunchwrap and it was pretty good (for Taco Bell) but the part everyone was commenting on was the vegan cheese. It was pretty good vegan cheese, they really got pretty close to the dairy based cheese, I don’t think anyone would even know. So I whipped up a quick nacho cheese recipe based on what Im guessing Taco Bell did and I think I got pretty dang close!

Also it’s nut free vegan cheese!
