This chicken sandwich, is my new favorite chicken sandwich! It’s just two ingredients for the chicken patty, and it comes out tasting just like chicken! This is a hearts of palm chicken sandwich! If you like this recipe make sure you check out this one too! and this one!
Hearts of Palm
First we need two cans of hearts of palm. I remove the hearts of palm, slice them into strips, and then toss them into a saucepan. Cover them in a tablespoon of the just like chicken plant based seasoning. I toss those around then let them rest for fifteen minutes. When that time has gone by I cover them with water and bring them to a boil for another fifteen minutes.
Spicy Sauce
I’d like to make my sandwich spicy. In a bowl I add a tablespoon of vegan sour cream, a quarter cup of vegan mayonnaise, one tablespoon of dried Italian parsley, one teaspoon of garlic powder, one teaspoon of onion powder, one teaspoon prepared horseradish, one tablespoon of dijon mustard, one teaspoon of rice vinegar, one teaspoon of hot sauce, and a quarter teaspoon of cayenne pepper. Mix that all up then allow it to rest in the refrigerator for at least two hours or until our chicken is done.
The hearts of palm are done boiling, I strain those and save the broth liquid for later (cover it up). While the hearts of palm are in the strainer, I use the bottom of a bowl to press them down to help remove as much liquid as possible. Allow them to cool for about fifteen minutes. I am going to form the patties and give them a skin using rice paper. Use the saved chicken broth from earlier to hydrate the rice paper. Lay out the paper, add in some hearts of palm and wrap them up into a patty size/shape. Put these onto an olive oil covered plate, cover it up, then toss them in the freezer for about two hours.
Batter Time
Now we make our batter. In one bowl I add a tablespoon of vegan sour cream, a cup of water, and a tablespoon of hot sauce. I whisk that up and it is going to act as our milk bath. In a bowl beside this one I add one cup of all purpose flour, a teaspoon of creole seasoning, a teaspoon of kosher salt, and a bunch of ground black pepper. Mix that all up. At this point I’m going to fill a dutch oven with enough oil to fry these patties in and get the temperature up to 365ºf.
I pull the patties out of the freezer, dip them in the flour, then to the wet batter, then back to the flour again. Toss them on a rack until the oil is up to the right temp. I fry two at a time, it only takes about six or seven minutes to fry. Make sure they are nice and golden brown. While they fry I toast up my buns. I start with some pickles on the bottom bun then add the sauce, then patty, shredded lettuce and the other bun! This sandwich looks awesome.

How To Make Chicken With Only 2 Ingredients
Ingredients
- 2 cans hearts of palm
- 1 tbsp just like chicken plant basics seasoning
- 2 tbsp vegan sour cream
- 1/4 cup vegan mayonnaise
- olive oil
- 1 tbsp dried Italian parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp prepared horseradish
- 1 tbsp dijon mustard
- 1 tsp rice vinegar
- 2 tbsp hot sauce
- 1/4 tsp cayenne pepper
- 4 sheets rice paper
- 1 cup all purpose flour
- 1 tsp creole seasoning
- oil
- 1 tsp kosher salt
- ground black pepper
Instructions
- Slice hearts of palms into strips then put them in saucepan.
- Cover them in just like chicken seasoning, toss them around and let rest for 15 minutes.
- Cover them in water and bring it to a boil. Let boil for 15 minutes.
- In bowl add vegan sour cream, vegan mayonnaise, dried Italian parsley, garlic powder, onion powder, horseradish, dijon mustard, rice vinegar, hot sauce, and cayenne pepper. Mix together then let rest in refrigerator.
- Strain hearts of palm and save their liquid broth. With them in strainer, use something to press down on them (remove as much liquid as possible). Let them cool for 15 minutes.
- Dip rice paper in liquid broth then lay it out flat, add in some hearts of palm then mold the paper around it in a patty shape and size.
- Lay the patties on an olive oil covered plate, then cover the plate and put them in the freezer for 2 hours.
- Lay out two bowls side by side. In one add vegan sour cream, water, and hot sauce then whisk. In the other bowl add flour, creole seasoning, kosher salt and black pepper.
- Get dutch oven filled with oil to fry the patties and get temp to 365ºf.
- Dip patties in flour mix, then wet batter, then back to flour again.
- Fry for 6 or 7 minutes.
- Prepare sandwich and enjoy!
