What the HECK is TEMPEH and WHY you SHOULD Eat MORE of it!

Nutrient Rich Dinner

      Tempeh is cultured and fermented soybeans. The culture grows a mycelium that binds the soybeans into a cake-like form. This is going to make an amazing, nutrient rich dinner! Tempeh is so versatile! It is only going to take maybe twenty minutes to do this so let’s get started! If you like this recipe, be sure to check out this one too! and this one!

Marinating Tempeh

     I’m going to use two blocks of tempeh, because the leftovers are going to be nice, and you can store these leftovers for a few days! I cut both blocks into small squares or triangles. Then in a bowl I am going to add a teaspoon of minced garlic, a quarter cup of vegetable broth, two tablespoons of apple cider vinegar, a little chili oil, two tablespoons of coconut aminos (or soy sauce), a little Not Steak Sauce, and a tablespoon of peanut butter powder (you could use regular peanut butter!). I quickly mix this up, toss in the tempeh and let it marinate for about fifteen minutes.

     In the meantime, to get the rest of the dish together I make a simple bagged rice. I steam some broccoli and while it is steaming I get a non-stick pan, put it on a medium heat. Then I added a little olive oil, then the tempeh along with most of the sauce (I want to save just a little of the sauce for something else). Bring this up to a simmer and let it cook for about ten minutes. Make sure to flip the pieces while they are cooking.

Final Steps

     Once the broccoli is done steaming, add it to the bowl with the leftover marinade. Toss it around really well. Then we are going to plate this up. I start with the rice, toss the tempeh on one side, broccoli on the other. I have a little popcorn leftover from lunch so I’m going to sprinkle some on as a topping.

     This looks amazing. The flavor is amazing. This is almost like an asian style dish. It has a little of a nutty, sweet taste. But it also has a great snap and chew to it. Ingredients
  

  • 2 blocks tempeh
  • 1 tsp minced garlic
  • 1/4 cup veg broth
  • 2 tbsp apple cider vinegar
  • chili oil
  • 2 tbsp coconut aminos or soy sauce
  • Not Steak Sauce
  • 1 tbsp peanut butter powder
  • olive oil
  • rice
  • broccoli

Instructions
 

  • Cut the tempeh into small squares or triangles.
  • In a bowl add minced garlic, veg broth, apple cider vinegar, chili oil, coconut aminos, Not Steak Sauce, and peanut butter powder. Mix this up, add in the tempeh and let it marinate for 15 minutes.
  • Prepare some rice, and steam some broccoli.
  • Get a non-stick pan on a medium heat, add olive oil, then the tempeh and most of its sauce. Bring this up to a simmer and let it cook for 10 minutes. Flip them while they cook.
  • When broccoli is done, add it to the bowl with marinade leftovers and toss them around.
  • To plate, add rice on one side, broccoli on the other, then the tempeh! Enjoy!
