The Sandwich that’s Breaking the Internet… Reinvented

      So everyone is making these chopped Italian sandwiches online. I would like to take this recipe, and make it vegan! Although I also have another idea with some other ingredients to make a different chopped sandwich recipe as well. With this whole chopped sandwich thing, you can basically take any sandwich idea, cut it up, and toss it in a bun! If you like this recipe, check out this one too! and this one!

First Sandwich

     The first thing I do is get my bun toasted. I use a simple, plant based baguette, cut it in half, drizzle in some olive oil, and then place it onto a hot pan. While that is toasting we can work on our other ingredients. Starting by laying out some iceberg lettuce, vegan deli meat slices, thin tomato slices, some hot peppers, add some Italian seasoning, red onion slices, vegan mayonnaise, one slice of vegan cheese, red wine vinegar, salt, and pepper. Then chop the heck out of it! Seriously, chop everything into little fine pieces and chunks. Then scoop everything into your bun!

     It makes a mess but it is so very good and so easy to put together! Everything being chopped gives you more of a consistent bite, the flavors mesh together differently and it’s easier to eat. It’s super refreshing and makes you want more!

Second Sandwich

     For our next chopped sandwich I’ll be doing it chicken, bacon, ranch style! To get us started I added some olive oil covered plant based chicken pieces into the air fryer, for about seven minutes at 380ºf. I also want to use some dehydrated vegan bacon bits, but I’ll need to rehydrate them. To do that, I add two tablespoons of the bacon bits to a bowl along with four tablespoons of hot water. Let’s not forget to get our bun toasted.

     Again this time I am starting with lettuce, a few tomato slices, red onion slices, green pepper slices, and vegan chicken pieces. I am going to be making my own ranch mixture for this sandwich. Now we add some cream cheese to the ingredients, a little vegan mayonnaise and for the ranch taste, some fresh dill, chives, parsley, garlic powder, and onion powder. I also add some salt and pepper, then our bacon bits. Time to chop chop chop it up!

     This chopped sandwich recipe is great! It tastes refreshing, healthy, and all the flavors go together perfectly. You get nice little crunches from the veggies and the chicken. The way everything is chopped almost makes it melt in your mouth. This sandwich is lighter than the first. You can add anything to your chopped sandwich! They are so fun, different, and easy to make! Sandwich 1

  • 1 baguette bun
  • pinch olive oil
  • few slices iceberg lettuce
  • few slices vegan deli meats
  • few slices tomato
  • few small hot peppers
  • pinch italian seasoning
  • few slices red onion
  • pinch vegan mayonnaise
  • 1 slice vegan cheese
  • pinch red wine vinegar
  • pinch salt
  • pinch pepper

Sandwich 2

  • pinch olive oil
  • few plant based chicken pieces
  • 2 tbsp bacon bits
  • 4 tbsp hot water
  • 1 baguette bun
  • few slices iceberg lettuce
  • few slices tomato
  • few slices red onion
  • few slices green pepper
  • few tbsp cream cheese
  • few tbsp vegan mayonnaise
  • pinch fresh dill
  • pinch chives
  • pinch parsley
  • pinch onion powder
  • pinch salt
  • pinch pepper

Instructions
 

Sandwich 1

  • Add olive oil to sliced bun and onto hot pan to toast.
  • Lay out lettuce, vegan deli meat, tomato, hot peppers, Italian seasoning, red onion, vegan mayonnaise, vegan cheese, red wine vinegar, salt, and pepper.
  • Chop everything up together pretty finely.
  • Add to bun.

Sandwich 2

  • Add olive oil coated vegan chicken pieces to air fryer at 380ºf for seven minutes.
  • Toast bun (same way as first sandwich).
  • Lay out lettuce, tomato, red onion, green pepper, vegan chicken pieces, cream cheese, vegan mayonnaise, dill, chives, parsley, garlic powder, and onion powder, all together.
  • Chop everything up together, pretty finely.
  • Add to bun.
