A LOT of you have asked me to show my meal prep… problem is I dont really meal prep haha I do make some meals in large quantities so that way we have leftovers for a few days. I don’t pack them into little bowls or Tupperware to store, but I just keep a giant bowl in the fridge for like 3-4 days and Monica and I scoop out of it the entire time until its gone. So this is about as close to a plant based meal prep as I get. I do always try to make dishes that are higher in protein per serving than just any quick dish. I want it to be as filling and beneficial as possible and this dish is one of Monicas favorites!
