Greatest Vegan Sandwich

     This is my new favorite sandwich! It’s meat free, dairy free, and it’s just really good! It’s loaded with flavor, protein, and some good fats too! I think you are going to love it, so let me teach you how to make it! This sandwich is based off of one I found on Rhubarbarians.com. Tofu!

      My sandwich starts with tofu. This tofu needs to be drained very well. I wanted to show you a new trick I learned which is microwaving your tofu. I drain the package, give it a little squeeze, a pinch of salt, wrap it in some paper towels then toss it in the microwave for one minute. When it is done, remove the paper towels and give it a nice squeeze. Make sure the juice is all out. Add the tofu to a bowl with a tablespoon of sauerkraut juice, two tablespoons of lemon juice, and a teaspoon of nutritional yeast. 

Combine The Ingredients

     I started to mix with a whisk but it didn’t work very well, so I suggest putting these ingredients into a blender or a food processor instead. Once it is smooth give it a taste and adjust the salt and tanginess. In this I add two tablespoons of chopped chives, two tablespoons of chopped fresh dill, and about a quarter cup of chopped walnuts. Mix everything together then transfer it over to a small sealable container and throw it in the fridge. Let it sit for at least an hour.

Black Lentils!

      I’ll be preparing some black lentils for the sandwich as well. Get a pan ready, over a medium heat. With about a tablespoon of olive oil. I add in around four cloves of chopped garlic, and a quarter of a white onion, chopped as well. While those cook I quickly drain the lentils, rinse them off with some cold water, then let them dry. Add the lentils to the pan, along with some salt and black pepper. Mix it around, then take them off the heat. 

Avocado!

      Now I put a new pan on the heat, then prep some things. I mash up an avocado, add a pinch of salt, and a squeeze of lemon juice. We also need a few thin slices of cucumbers. At this point, it’s time to get the buns ready. I squeeze on a bit of olive oil, toss them into the really hot pan, press them down and they will get perfect and toasty. Add your tofu spread, top that with the lentils, cucumbers, spread the avocado on the top half of the bun, and boom!

     This is the perfect vegan sandwich. It’s loaded with protein! This tastes great and looks awesome! It will be a little messy but who cares! The perfect, good for you dinner or lunch to make! Ingredients
  

  • 1 package of tofu
  • 1 tbsp sauerkraut juice
  • 2 tbsp lemon juice
  • 1 tsp nutritional yeast
  • 2 tbsp chives
  • 2 tbsp fresh dill
  • 1/4 cup walnuts
  • 1 can black lentils
  • olive oil
  • 4 cloves of garlic
  • 1/4 white onion
  • salt
  • black pepper
  • avocado
  • cucumber slices
  • bun

Instructions
 

  • Drain package of tofu, salt it, wrap it in paper towels, put it in a bowl, microwave for 1 minute.
  • Remove paper towels, put tofu in blender with sauerkraut juice, lemon juice, and nutritional yeast. Blend.
  • Transfer to a sealable container and add in chives, fresh dill, and walnuts. Let rest in fridge for at least an hour.
  • Get a pan over the heat with olive oil.
  • Add in garlic, and white onion.
  • Drain the lentils, rinse them off and let them dry.
  • Add lentils to pan as well as salt and black pepper. Mix it around, then take the pan off the heat.
  • In a new pan on the heat we put our bun to toast it.
  • Mash an avocado, add salt, and lemon juice. Thinly slice some cucumber.
  • Add some olive oil to the bun, then the tofu, then black lentils, cucumber and spread the avocado on the top bun! Enjoy!
