One can of Chickpeas will change how you think about CHEESE

Chickpea Cheddar Cheese

     Today I will be teaching you a cheddar cheese recipe, but it’s made out of chickpeas! Along with this cheese, I will show you how to make an Arby’s beef and cheddar, entirely from plants. This is probably the fastest vegan cheese you can make so let’s get started! But first, if we are making an Arby’s beef and cheddar, we need to deal with the Arby’s sauces. Arby’s Sauce

     Instead of the Arby’s sauce, I will be using my own Not Steak Sauce! But for the horsey sauce I wanted to make a vegan version. In a small jar, I combine a half cup of vegan mayonnaise, a pinch of salt, a pinch of white pepper, about a teaspoon of sugar, and about three tablespoons of prepared horseradish. Mix this all together and it turns out perfect. Throw a lid on it, then let this sit in the fridge for awhile. 

Beef Time

     For the beef, I’m using a doctored version of tofurkey slices. In a small pan I add half a cup of veggie broth with half cup of water, then bring that to a simmer. Now add a teaspoon of vegemite or marmite. Mix that in! I add my tofurky slices into the pan, lower the heat, and let those sit in the broth for about ten minutes.

Let’s Get Cheesy

     Time for the star of the show, the cheese! I start by straining one can of chickpeas, saving the liquid. Add the chickpeas to a high powered blender. Along with a quarter cup of veggie broth, a half cup of nutritional yeast, one tablespoon of lemon juice, a tablespoon of sauerkraut juice, three tablespoons of olive oil, around three cloves of garlic, a pinch of salt, and a quarter teaspoon of turmeric. Start blending! While this is blending, I slowly add in the chickpea liquid we saved. 

Build That Sandwich

     It’s about the right texture, now I am going to add a quarter teaspoon of xanthan gum. I blend this to make it extra smooth then pour it out into a container. Now we just need to toast the buns, and prepare them. On the bottom bun I add a little of our horsey sauce, a little Not Steak Sauce, and top that with the beef! You guessed it, overtop the beef is our cheese! This looks like a pretty amazing beef and cheddar.

     The chickpea cheddar cheese melts perfectly in your mouth and it is so flavorful! And it is so smooth and creamy! Even by itself it still tastes so awesome and cheesy. The meat is so juicy and light! This would be the perfect lunch, dinner, or whatever meal you want. It’s so light you could even have it as a snack. You could even use this cheese as a nacho cheese sauce, or for mac and cheese! Watch the full video here!

Ingredients
  

  • Not Steak Sauce
  • .5 cup vegan mayonnaise

  • 1/4 tsp turmeric
  • 1/4 tsp xanthan gum

Instructions
 

  • In jar mix together vegan mayo, salt, white pepper, sugar, and prepared horseradish. Put a lid on it and let it sit in fridge.
  • In a small pan add vegetable broth and water then bring it to a simmer. Now add vegemite or marmite and mix it in.
  • Add tofurky slices to the pan, lower the heat, and let those sit in broth for 10 minutes.
  • Strain chickpeas (save the liquid).
  • Add to a blender along with vegetable broth, nutritional yeast, lemon juice, sauerkraut juice, olive oil, garlic, salt, and turmeric. Blend!
  • While blending, slowly add chickpea liquid.
  • Now add xanthan gum and blend once more. Pour cheese out into container.
  • Toast buns, add on horsey sauce and Not Steak Sauce, the beef, then cheese and another bun, enjoy!

  1. I can’t find your recipe post for this latest video about the can of chickpea cheese. I I’m not an auditory processing kind of person (TBI) and I’m really hoping you can give me some advice. How is the best way to get the full recipe from your video? Is it on a post on the website?
