Who needs Meat when you have Gluten

Did you know you could make steak out of pure gluten? It’s almost entirely protein and it’s incredibly delicious. This meat is super tender, and it has the consistency just like steak. Today I am making a steak and cheese sandwich. I am going to show you how to make it from scratch but first let me show you the much easier way! If you like this recipe, be sure to check out this one too! and this one!

Vegan Steak and Cheese

I am starting with a can of braised gluten meat. You can get this online or at most asian grocery markets. But before dealing with that, I prepare some veggies. I wash and chop some mushrooms. Chop my onions and green peppers. Then I heat up a pan over a medium/high heat with some olive oil. Add in the mushrooms, some salt, pepper, then the onions and peppers. Time to add in the braised gluten! I also add in some of my sauce, Not Steak Sauce!

The Easy Way

I cook this until it is all heated through. Now slice up your bun, add some vegan mayonnaise. I toss some vegan cheese overtop the meat so that it melts in. Add it into the bun and bam! You have an amazing steak and cheese sandwich. I top it off with a pinch of olive oil and have chips on the side! It tastes so delicious. Any meat eater would love this! The thing with canned seitan is it’s very quick and easy! But it’s not super dense and chewy like a normal steak and cheese sandwich would feel.

Make it From Scratch!

Now I’m going to tell you how to turn a ball of dough into pure gluten, almost entirely protein. First we need to make our large dough ball. I add five cups of flour, a large pinch of salt, and about two cups of water to a bowl. Mix everything together then I dumped it out onto a cutting board. Knead it until it forms a nice ball. I add my ball to a bowl with a lid on it and let it rest for about an hour.

The Dough

After the hour we just need to wash our dough. We are essentially washing away the starches and fibers, to be left with almost pure gluten. To do this I put the ball in a bowl in the sink, fill it with water, and start kneading and working the dough until the water starts to run like milky/clear. At this point I toss my ball into a food processor along with a pinch of olive oil, a teaspoon of garlic powder, a teaspoon of beetroot powder, a teaspoon black strap molasses, and a teaspoon of marmite. I pulse this until it is all combined.

Cooking the Steak

I divide my mixture into two (for two steaks), toss them onto some parchment paper and fold the paper around the steaks like envelopes. Into the steamer those go, cover it up and let them steam for about an hour. I pull them out of their parchment, season them with some garlic powder, salt, and pepper. Then I slice them into fajita like steak slices. While I was steaming I cooked up some more onions, mushrooms and peppers and then I set those aside. In the same pan though I add a bit more olive oil, then toss in our gluten steaks. I let these cook for a little bit before adding in the mushrooms and everything else.

Enjoy!

Time to get our bun ready again with some vegan mayonnaise and this time I’m tossing some Not Steak Sauce right in the bun. Then add the Steak! As well as a drizzle of olive oil, and some vegan cheese. Now this sandwich is great! Very meaty, has that good chewy bite to it. Everything goes so well together. This is a perfect, savory dinner to make! This is everything you would expect from a real steak and cheese! Watch the full video here!
