SUPER Protein Waffles, Dairy Free, Egg Free, Gluten Free

Protein Packed Waffles

     These are super protein waffles! You can top them however you want! You can freeze them! And they are so delicious and easy to make. Each waffle comes out to 14.5 grams of protein! If you like this recipe, check out this one too! and this one!

     To start off, we need some rolled oats. I’m using Bob’s Red Mill rolled oats and they are certified gluten free! Add one cup of these into a food processor, with a big pinch of salt, and about a cup of your favorite protein powder. Pulse this together and blend up those oats. Once you get this to or close to a flour consistency, I’m going to add a quarter cup of coconut oil, one sixteen ounce block of silken tofu, two teaspoons of lemon juice, and a quarter teaspoon of baking powder. Now we just need to pulse the mixture together.

     You can add in a little maple syrup if you want it to be on the sweeter side. Also if your mixture seems too thick, slowly add in little bits of water to get it right. I ended up adding about three tablespoons of water to mine. This mixture is cold but we want it to be more like room temperature, so I let it sit for about fifteen minutes.

Topping

     Before we make the waffles I want to teach you one of my favorite, protein rich toppings! In a container I add one can of coconut milk, a teaspoon of lemon juice, a tablespoon of maple syrup, a tablespoon of melted vegan butter, a teaspoon of cinnamon, and a dash of nutmeg. Shake this up well! Toss in one scoop of protein powder. Now shake again! Let this rest in the fridge so it thickens up.

Make Those Waffles

     I know we are talking about waffles, but you can totally make pancakes out of this mixture too! Anyways, for the waffles, I forgot an ingredient earlier. We need to add in about a tablespoon and a half of Bob’s Red Mill egg replacer. Blend this again once more!

     Heat up the waffle iron, I add in about half a cup of mix at a time, which will make about five waffles. These come out light! They are nice and airy and they look amazing! I top mine with the cream mixture I made, along with a bit of maple syrup. It doesn’t taste like some health food waffle, it tastes like a regular, sweet waffle! These are so good! These are dairy free, egg free, and gluten free! You can throw them in the freezer and take them out whenever, toss it in the toaster, then enjoy! Watch the full video here!

Ingredients
  

Waffles

  • 1 cup rolled oats
  • salt
  • 1 cup protein powder
  • 1/4 cup coconut oil
  • 16 ounce block of silken tofu
  • 2 tsp lemon juice
  • 1/4 tsp baking powder
  • maple syrup
  • 1.5 tbsp egg replacer

Waffle topping

  • 1 can coconut milk
  • 1 tsp lemon juice
  • 1 tbsp maple syrup
  • 1 tbsp vegan butter
  • 1 tsp cinnamon
  • pinch nutmeg
  • 1 scoop protein powder

Instructions
 

  • Add rolled oats to a food processor, with salt, and protein powder. Pulse this into a flour like consistency.
  • Add in coconut oil, tofu, egg replacer, lemon juice, and baking powder. Pulse again!
  • Add water until the consistency is right. Let mixture sit for about 15 minutes.
  • Mix together coconut milk, lemon juice, maple syrup, vegan butter, cinnamon, and nutmeg. Add protein powder then shake it up. This is our topping! Let rest in fridge until waffles are done.
  • Add mix to waffle iron, plate them up with some of the topping!
