Not very many many recipes can still come out good if you over cook them, or BURN them, but burt pasta has a special flavor that comes from toasting the starches of the pasta itself and by burning and caramelizing the sugars in the tomato sauce on top of that you are adding in special kick with some chili peppers for a really unique dish. One can of Chickpeas will change how you think about CHEESE! I was in the mood for an Arby’s Beef and Cheddar like sandwich, I didn’t have any good vegan cheese around the house so I figured I would make a really quick cheese sauce.
Normally I would make it out of something like cashews, but you work with what you got and I had a bunch of cans of chickpeas.
This comes out super creamy, super cheesy… its a perfect vegan cheese sauce that can be used for sooo many different things!

I’ve been really interested in reading about athletes diets considering they are commonly doing a lot of research and have a lot invested in staying healthy and fit. One thing I kept reading about was how Lewis Hamilton enjoys a plant based curry but he felt it was too fattening… so I lowered the fat and added more protein and it came out incredibly good!

I made this cheese base and then used it to make a super smooth and creamy cream cheese, but also used it to make 2 different mozzarella cheese.

I recently watched a video with @JKenjiLopezAlt over on @NYTCooking (link below) of him making the “Crispiest Roast Potatoes” Then I fell down a rabbit hole of crispy roasted potato recipes and I noticed that they almost all followed the SAME Exact formula….
3 lbs potato, 2 tbsp salt, 1/2 tsp baking soda… Why?
Well from what I can find it started with Kenji Lopez Alt 7 years ago when he was perfecting his roasted potato recipe and it seems everyone followed.
So really I wanted to test the secrets for myself!
